Every season, new concepts and cocktails are crafted at the bar inside Scarpetta, one of many dining options at the Fontainebleau Miami Beach. The latest idea is Sorso, a pop-up lounge that was introduced in March at the South Beach Wine and Food Festival. Sorso aims to combine science and spirits. The lounge’s specialty cocktails are made by pouring liquor into 5-foot towers, where it is infused with fruits, nuts or shrubs as it winds down tubes and drips from one level to the next.
